Recipe: Utmost Grilled Cheese
I have talked about the Best of Bridge cookbook series before. I own the whole set, as does my sister, my Mom and my Grandmother did. It is a classic set that has some wonderful recipes, some very simple, some more extravagant.
One of my favourite, simple (because simple is key for me these days) lunch/easy dinner recipe is for The Utmost Grilled Cheese.

1 loaf french bread
2 Tbsp mustard
1 cup cheddar cheese, grated
1 cup jack cheese, grated
1/4 cup butter or margarine softened
1/2 tsp Worcestershire sauce
1 egg
6 slices bacon, cooked crisp and crumbled (you could use ham for a healthier option or a good way to use ham leftovers)
2 green onions, chopped
Half loaf lengthwise and spread cut sides with mustard. Mix cheese, butter, Worcestershire, egg, bacon and onions in a bowl, until well combined. Spread mixture on bread. Place on a baking sheet and broil until lightly browned and puffed (approx 5 minutes). Cut into strips and serve immediately. Great for lunch or dinner with a bowl of soup.
